Baked Pear and Goat Cheese Salad

Ingredients
- 1 1/2 tbsp walnuts finely chopped
- 3 tbsp goat cheese softened
- 2 pears peeled, halved, and cored nonstick cooking spray
- 1/4 cup raspberry vinegar
- 1/4 cup honey
- 1/4 tsp ground ginger
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 1/8 tsp crushed red pepper flakes 6 cup mixed salad greens
Instructions
- Preheat over to 400°F.
- Toast walnuts in a small skillet over medium-high heat for 1 to 2 minutes or until walnuts begin to brown, stirring constantly.
- Mix goat cheese and walnuts.
- Place pear halves, cut sides up, on an ungreased shallow baking sheet.
- Spoon goat cheese mixture evenly into the center of each pear.
- Lightly spray pears with cooking spray.
- Bake 20 minutes or until pears are just tender.
- Meanwhile, mix raspberry vinegar, honey, ginger, cinnamon, salt, and red pepper flakes with a wire whisk until well blended.
- Toss greens with vinaigrette in a large bowl.
- To serve, spoon 1 1/2 cups of the greens mixture onto an individual serving plate.
