Baked Pear and Goat Cheese Salad

Ingredients

  • 1 1/2 tbsp walnuts finely chopped
  • 3 tbsp goat cheese softened
  • 2 pears peeled, halved, and cored nonstick cooking spray
  • 1/4 cup raspberry vinegar
  • 1/4 cup honey
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/8 tsp crushed red pepper flakes 6 cup mixed salad greens

Instructions

  • Preheat over to 400°F.
  • Toast walnuts in a small skillet over medium-high heat for 1 to 2 minutes or until walnuts begin to brown, stirring constantly.
  • Mix goat cheese and walnuts.
  • Place pear halves, cut sides up, on an ungreased shallow baking sheet.
  • Spoon goat cheese mixture evenly into the center of each pear.
  • Lightly spray pears with cooking spray.
  • Bake 20 minutes or until pears are just tender.
  • Meanwhile, mix raspberry vinegar, honey, ginger, cinnamon, salt, and red pepper flakes with a wire whisk until well blended.
  • Toss greens with vinaigrette in a large bowl.
  • To serve, spoon 1 1/2 cups of the greens mixture onto an individual serving plate.
