Apple Butter Muffins

Ingredients

  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/2 cup pecans or walnuts chopped
  • 2 cup flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/4 cup Tanner’s Apple Butter

Instructions

  • Preheat over to 400°F.
  • Grease 12 muffin cups or line with cupcake liners. Set aside.
  • Combine sugar, cinnamon, nutmeg, and allspice in a large bowl.
  • Toss 2 tablespoons sugar mixture with pecans in a small bowl. Set aside.
  • Add flour, baking powder, and salt to remaining sugar mixture.
  • Combine milk, oil, and egg in a medium bowl.
  • Stir into flour mixture just until moistened.
  • Spoon 1 tablespoon batter into each prepared muffin cup.
  • Spoon 1 teaspoon apple butter into each cup.
  • Spoon remaining batter over apple butter.
  • Sprinkle reserved pecan mixture evenly over tops of muffins.
  • Bake 20 to 25 minutes or until toothpick inserted in the center comes out clean.
  • Cool.
