Apple Butter Muffins

Ingredients
- 1/2 cup sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp allspice
- 1/2 cup pecans or walnuts chopped
- 2 cup flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1/4 cup Tanner’s Apple Butter
Instructions
- Preheat over to 400°F.
- Grease 12 muffin cups or line with cupcake liners. Set aside.
- Combine sugar, cinnamon, nutmeg, and allspice in a large bowl.
- Toss 2 tablespoons sugar mixture with pecans in a small bowl. Set aside.
- Add flour, baking powder, and salt to remaining sugar mixture.
- Combine milk, oil, and egg in a medium bowl.
- Stir into flour mixture just until moistened.
- Spoon 1 tablespoon batter into each prepared muffin cup.
- Spoon 1 teaspoon apple butter into each cup.
- Spoon remaining batter over apple butter.
- Sprinkle reserved pecan mixture evenly over tops of muffins.
- Bake 20 to 25 minutes or until toothpick inserted in the center comes out clean.
- Cool.
