Brandied Sweet Potatoes

Ingredients

  • 1 lbs. sweet potatoes peeled
  • 1/2 cup firmly packed brown sugar
  • 3 tbsp butter or margarine
  • 3 tbsp brandy or water
  • 1/2 tsp salt

Instructions

  • Place potatoes in a Dutch oven or large saucepan.
  • Add enough water to the pan to cover the potatoes completely.
  • Bring to a boil over medium-high heat.
  • Continue cooking for 30 to 35 minutes or until potatoes are tender; drain.
  • Cool slightly and cut crosswise into 1/2-inch thick slices.
  • Cook sugar, butter, brandy, and salt in a large skillet over medium heat until bubbly, stirring constantly.
  • Add potato slices and cook until potatoes are glazed with sugar mixture, turning occasionally .
