Brandied Sweet Potatoes

Ingredients
- 1 lbs. sweet potatoes peeled
- 1/2 cup firmly packed brown sugar
- 3 tbsp butter or margarine
- 3 tbsp brandy or water
- 1/2 tsp salt
Instructions
- Place potatoes in a Dutch oven or large saucepan.
- Add enough water to the pan to cover the potatoes completely.
- Bring to a boil over medium-high heat.
- Continue cooking for 30 to 35 minutes or until potatoes are tender; drain.
- Cool slightly and cut crosswise into 1/2-inch thick slices.
- Cook sugar, butter, brandy, and salt in a large skillet over medium heat until bubbly, stirring constantly.
- Add potato slices and cook until potatoes are glazed with sugar mixture, turning occasionally .
